The powerful community of butchers was installed in a kind of large hall called the big butcher or meat market which was installed behind the Châtelet. The owners of this large butcher's shop were the four families of Thibert, Saintyon, Auvergne and Ladehors. In the 17th century, the Auvergne family died out and the large butcher shop became the property of the three other families. In 1587, Henri III had modified the regulations of this community. From then on, any aspiring butcher must be presented to the common house installed rue de la Tannerie (near the place de Grève) and undergo a three-month investigation..
